Our belated Father's day at the Lake

Since my parents had just come home from Hawaii the weekend before father's day we all decided to celebrate the week after. So last Saturday we packed up and headed to the lake. Everyone had fun playing in the sand and the water. The boys are at such a fun age of learning all about the water (well and everything around them).

You Make My Day!

My new bloggy friend Kellie passed along her first bloggy award to me. I started reading Kellie's blog a few months ago and have really enjoyed her funny stories and family life. Well she gave me this fun bloggy award!
In honor of the award I will be passing it on to a few bloggers who make my day :-)

My sister Clare at Diapers to Designs. She is always telling fun stories about what is going on in her busy life. Not only does she tell fun stories but she is an amazing big sister :-)

Spring Reading Thing 2008 Wrap-up


Today is the last day of the spring reading thing for this year. I had 10 books on my list for this spring reading thing. I only finished 4 of those books. I am a good way into Gone with the Wind but did not get it finished in time.

I think the thing that slowed me down was the book that I read for our book club. It was The Confessions by St. Augustine and written in the 4th century. I had a hard time getting into the book.

This challenge helped me know what book to read next. A lot of times when I finish a book it takes me a while to start another book because I don't know what I want to read. This helped me dive right into the next book.

My favorite book I read this spring was Pillars of the Earth! I really enjoyed this book. You can read my review here.

I really look forward to participating in the Fall Reading Thing!

Happy Father's Day

This morning Sammy and I got up and let Tim sleep in. We made cinnamon rolls and coffee.. While we were doing those things Sammy also ate breakfast and got dressed for church (read Mommy made 2 breakfasts and got Sammy dressed). Apparently I was a little sidetracked while making the coffee and forgot to put the coffee pot in the machine.. HUGE Mess

The cinnamon rolls however were delicious! We went to church where they gave all of the Fathers a gift card to Five Guys!

After church we made a trip to the pediatrician to get Sammy's ears checked. He had been sticking his fingers inside but then today he started pulling on them. They were clear so we might just be getting some more teeth.

After the pediatrician visit we went to our friend Murray's house to see a puppy that he got given from someone at his office (they were going to take him to the SPCA). Murray couldn't keep him because his dog and the puppy didn't mesh very well. So with out further adieu meet the puppy:

Lazy "Lasagna"

I am going to be blogging more on some of the things I am making for dinner at my house. So I am going to share some of our favorite recipes that we use around our house.

Here is a recipe for a super easy "lasagna" that you can make in the slow cooker:

Prep Time: 30 minutes
Cooking Time: 3 hours

1 lb. ground beef
16 oz pkg. egg noodles (I use the medium sized noodles)
32 oz. jar of spaghetti sauce (whatever flavor you like)
8 oz. shredded mozzarella cheese
16 oz. cottage cheese

1. Brown the ground beef, drain the fat
2. While browning beef cook noodles (follow directions on the noodles)
3. Stir spaghetti sauce in with the beef
4. Stir cheese into the drained noodles
5. In the slow cooker place 1/3 of the meat sauce, layer on 1/2 of the noodles (repeat, ending w/ meat sauce on top)
6. cook on low for 3 hours

Meal Plan Monday

I have found that planning my meals before I go to the grocery store I spend a lot less on groceries and don't tend to buy junk. What works best for me is to go on pay day and go ever other week. I still have to run out for milk but that is usually the only thing I need to run out to get.

So here is my meal plan for the week:
Monday: Hot dogs on the grill, corn (on the grill), salad, and cantaloupe
Tuesday: grilled chicken, potatoes, corn, carrots and peas (the veggies are made on the grill in foil packets with butter and lots of seasoning)
Wednesday: Lazy Lasagna, garlic bread, cantaloupe
Thursday: Chicken, rice, and broccoli (We usually eat at biblestudy on Thursday nights, but I plan a meal that is out of the freezer so if it canceled I have something to make for dinner.)
Friday: Cream Pork Chops, salad, peaches
Saturday: Macaroni and cheese with hot dogs, mixed vegetables, peaches
Sunday: Creamy Spaghetti, mixed vegetables

Reading


Sammy loves to read. He plays with his toys but he always comes back to his books. He likes to sit on the couch with a snack and a drink and flip the pages of his truck book.


Or explore the textures of his touch and feel books. Right now his current favorite book is touch and feel bug book he got from Aunt Reatha for his birthday.

Yesterday Sammy and I went to story time at the Harrisonburg library. They have it broken down for different ages. So he was in the birth to 2 year session and had a total blast! They sing songs and play with bells. Then listen to a few stories then play with some more toys. We will be making it back their again next week!

Our 3rd Anniversary

This past Wednesday Tim and I celebrated our 3rd anniversary. The Friday before we went out to dinner and a movie while Sammy spent the night at Tim's parents house. We got to sleep in Saturday morning before going to pick him up.

Wednesday Tim had his class so we did not get to celebrate to much we did have dinner together once he got home from class.

On Friday we got a delivery from Hawaii (where my parents have been for 2 weeks). It was a beautiful orchid that they had picked out in a shop in Hawaii. We love the orchid and hope that we can keep it alive and thriving. If anyone has good tips please let us know :-)

Tim and I are also looking forward to going to our anniversary/birthday present from Clare and Chris. We will be going to an amazing marriage retreat in Richmond in the fall. They will be watching Sammy for us as well. Which makes the whole weekend very stress free.

Pizza Crust and Pizza Sauce

So I am just getting a chance to post my pizza dough recipe and my pizza sauce recipe for anyone that might actually be reading and doesn't have their favorite already :-)

Pizza Dough:
1 1/3 cups water (80 to 90 degrees F)
1 teaspoons honey or sugar
2 teaspoons salt
2 tablespoons extra virgin olive oil (I use my garlic flavored EVOO to add some flavor to it)
3 1/4 cups bread flour
3/4 cup whole wheat flour
2 1/4 teaspoons yeast, active dry, instant or bread machine

Please ingredients, in order listed, in bread pan fitted with kneading paddle. Place in bread machine. Select Dough/Pizza Dough. Select dough siz(2.0 lb). Press Start to mix, knead and rise. When Dough Cycle is completed, deflate dough, divide it in half and make two large pizzas.

Preheat the oven to 375. Put the sauce and toppings on your crust and bake for 15 minutes or so. Checking to see when the toppings are done (this will depend on which toppings you have on your pizza).

Pizza Sauce:
3 TBSP olive oil
1 medium onion diced
3 cloves of garlic minced or pressed
1 28oz can crushed tomatoes
1 8oz can tomato paste
1 1/2TBSP sugar
oregano to taste (I do about 1/2 TBSP)
basil (same as the oregano)
salt and pepper to taste

1. Cook the diced onion over medium-high heat in the EVOO until soft
2. Add in the garlic towards the end of cooking (about 2-3 minutes)
3. Add all ingredients to the slow cooker and let them simmer all day on low heat (this will be enough sauce for 2 large pizzas)

A couple of helpful hints:
1. If your slow cooker is less than half full its going to act like the temperature is set on high
2. You can double the batch of the pizza sauce and freeze it so you only have to make it every other time.
3. Tim likes things spicy so I add in some spices like cayenne pepper and jalapeƱo salt to my pizza sauce to add a little kick. So experiment to find the flavor you like.

Memorial Day weekend

We have had a busy two weeks. I got a little behind on the pictures and blogs etc. So here is my attempt to get partially caught back up.

Tim did not have the measles.. they are not sure what he had but he is felling 100% better. This was our Memorial Day weekend:

Saturday:
-Nicia's soccer game
-home depot to get stuff to start a garden
-got the garden built and dirt dumped in
-cook-out at my sister's
-spent the night at their house

Sunday:
-went to the lake and hung out on the beach
-played at my parents house
-drove home
-cleaned and got ready for the cook-out
-planted garden

Monday:
-Tim's family came over for a cookout
-played in the inflatable pool
-hung out and enjoyed the amazing weather
