Menu Plan Monday (2-28-11)

Monday:

- Chicken Tortilla Soup

Tuesday:

- King Ranch Chicken (new)

Wednesday:

- Toasted Ham and Cheese Sandwiches

Thursday:

Creamy Italian Chicken – For bible study, we rotate through brining the main dish.

Friday:

- Egg and Cheese Bagels

Saturday:

- Breakfast: Smoothies and biscuits

- Stuffing & Chicken (new) with broccoli

Sunday:

- Breakfast: Eggs and toast

-Slow-Cooker Taco chicken (new) with taco rice and mixed veggies

Update on us: Tim and I managed to stay healthy (*knocks on wood*)!!  We are hoping it stays that way!  It’s been a long time so I think we should be okay.  Sammy is doing great!  He had a fever on Friday and has been fine since then!  Thanks for the prayers we are very thankful it didn’t last long and the rest of us did not get sick!

What I Learned This Week–It wasn’t Pretty

Well the stomach bug finally hit our house.  Hours before we were leaving for a long weekend with friends and family.  It has only claimed (*knocks on wood*) one victim.  My poor little man got sick all over the sofa on Thursday afternoon. 

Some of you might be wondering what I could have possibly learned this week when the post starts off like that.  I learned that I can in fact clean up vomit with out vomiting myself.  All my other attempts at doing this pre-kids resulted in me running to the toilet to throw up.  So I am glad to say that is what I learned this week. 

Sammy is doing pretty good today and kept down water and food.  He spit up (not a real throw up) after lunch but its been smooth sailing since then.

Oh The Weather

Last week the weather here was amazing!  We hit up a couple of playgrounds and enjoyed the great weather!  This is a little playground by our house and we had it to ourselves for two hours:

Chicken Tortilla Soup Recipe

I got the following recipe from my good friend Katie.  Thanks Katie!

Ingredients:

1 onion finely chopped
clove of garlic
2 tablespoons vegetable oil
4 cups of chicken broth
1 teaspoon ground red chilies
3/4 teaspoon dried basil
1/4 teaspoon pepper
1 15 oz. can tomato puree
1 can of corn (normal size) -drained
1 can of black beans (normal size) - drained
1 can of petite diced tomatoes (normal size) - undrained
2 cups of cooked chicken (I used canned and drained 2 cans make it hearty enough for dinner)

add-on for after its cooked:
tortilla chips
avocado
sour cream
shredded cheese

Directions:

In a big pot cook the onion and garlic with the vegetable oil.  Then add in the rest of the ingredients and let it simmer for a while.  When you are ready to eat you can serve it with any of the add-ons listed above.

THE SUN!!!

The sun is out and it looks gorgeous outside.  We have had some GREAT weather this week.  Today is no exception!  We were suppose to go visit my sister, however, Sammy is sick.. again.. so we will be staying home.  We will however be enjoying some warm weather in our own back yard.

Some of My Favorite Techy Things

I love reading other people’s favorite things post and it had been a long time since I have done one.  So here are some of my current favorite techy things:
1. My HTC Desire – an Android phone – I love that all of my contacts are synced up with my gmail accounts.  I love always having my calendar with me and not having to carry a separate one.  I love the games that I have installed for Sammy when we have a little wait somewhere!

2. Watson – I think this is amazing and I love that its built on a Linux operating system

3.  Windows Live Writer – I have been using this for a while now (6 months or so) and love the ease of writing posts and scheduling posts Smile

4.  My new Dryer – is a dryer techy.. we will say yes!  I love how much faster I am able to get the laundry done!!

5. Twitter – I am loving it more and more each day. I have found some wonderful resources with it and I love being able to see a small part of people’s days that don’t make it to their blogs.  You can follow me here. I have just started to use TweetDeck and I love the way it organizes things!

The Good Daughters–Review and Giveaway


Yes you read that right a giveaway!  First for the review:
I really loved this book.  The story is told by two girls (Dana and Ruth)  born to two different families and told from their points of view.  I love that style of narration when it switches back and forth between the two characters lives.  These girls were born on the same day and the families called them birthday sisters.  This was the only thing these “sisters” had in common. 
Ruth lived on a farm with her parents and sisters.  She had a stable life but always felt like she didn’t fit in with her family. Dana had a tough life, her father was always disappearing to try and make it big with some new invention or song he wrote.  Her mother was present but very different from her.  Her brother Ray was  a free spirit.

A Bit of This and That

  1. I had a super fun and busy weekend. I am not completely organized for the week ahead but I will be able to catch up some tonight!
  2. On Saturday we went to my parents for most of the day. Sammy had a blast playing with Gigi and Pop Pop.
  3. I got my mom’s old sewing table that I am super trilled about!
  4. We did some computer work for them while we were there and got them all setup Smile
  5. Sammy got a super adorable hat while at my parents house. My Great Aunt Nancy made a bunch of hats for the kids and Sammy got this one:168333_1884507711181_1196037832_2322928_4685249_n
  6. Saturday night Tim and I went and looked at sofas and picked out the style we like! I am excited to save up and pick out the configuration we are going to get!
  7. Sunday Tim played bass at church and I ran the lights. That is something new for me to do and I am having a lot of fun.
  8. After church we headed out to Tim’s parents for a late lunch and a super fun Valentine’s dessert made by his sisters!
  9. The weather was really nice yesterday and we went out to the creek by his parents house and did some of this:

This week is suppose to be really warm and I can’t wait to get out and enjoy the weather with Sammy!!

My Great Aunt Amy’s Peanut Butter Pie Recipe

I received a lot of requests for the peanut butter pie recipe.  So I thought I would share it here as well!

Ingredients:

4 oz. cream cheese (softened)
1 c powered sugar
1/3 c peanut butter
1 small container Cool Whip
1 graham cracker cracker crust

Mix softened cream cheese, powered sugar & peanut butter. Fold in thawed cool whip.  Pour into crust and put in the freezer.  Pull the pie out an hour before you want to serve it.
