Garden Challenge




So my beds need TONS of work!  It however is on the to do list for this weekend!  I haven’t started much yet this year.  We have had a very weird Spring for Virginia and there is still a threat of snow last night!  I do have some plans for our garden this year.  Soon I will be planting some peas and lettuce.  After the peas are done producing I will be planting tomatoes, cucumbers, squash and zucchini.  Then in some deck pots I will be growing herbs: sage, cilantro, basil and oregano.  This year I am also going to try and grow something in my actual soil(carrots) and not just my above ground beds. 

Sammy is excited about the garden.  Mostly because he LOVES tomatoes.  Last year I don’t think a single one made it into the house!

We woke up to some non typical snow on Sunday morning.  Sammy thought it was very exciting.  As we were backing out of the driveway to go to Church Sammy said, “It’s Christmas!!! Where is Santa?”

Menu Plan Monday (3-28-11)


- Lunch: leftovers

-Dinner: Chipped Beef (a roll over from two weeks ago)


- Breakfast: Muffins and yogurt

-Lunch: Peanut butter and jelly, baby carrots and yogurt

-Dinner: Southwest Pasta Skillet (new)


- Breakfast: English Muffins and fruit

-Lunch:  Grilled cheese, fruit, and carrots

-Dinner: Marconi Beef Skillet


- Breakfast: Smoothies and Biscuits

-Lunch: peanut butter and jelly, yogurt, and crackers

-Dinner: Bible study (we rotate through bringing the main dishes)


- Breakfast: Cereal and fruit

-Lunch: Mac and Cheese and baby carrots

-Dinner: Santa Fe Chicken Enchilada Soup (new)


- Breakfast: Eggs and biscuits


-Dinner: Cilantro Lime Chicken Skewers


- Breakfast: Muffins

-Lunch: leftovers

-Dinner:  Taco Skillet

Annie Jr.–Pepper

Last weekend Tim and I had the pleasure of seeing Annie Jr. performed by Nicia’s (Tim’s sister) school.  Nicia was in the play as one of the orphans named Pepper (the mean orphan).  There was no flash photography allowed so a lot of my picture turned out blurry but I got a few good ones!

The kids did an amazing job with this play.  Everyone is in middle school and they are responsible for custome changes, set changes, switching microphones, lights, curtains, props, etc!  Not only did they do an excellent job with that the play was amazing and really entertaining!

Easy Potato Soup Recipe


3 cups chicken broth
2 lb. bag frozen hash brown potatoes
1 1/2 tsp. salt
3/4 tsp pepper
3 cups of milk
3 cups shredded Monterey Jack or Cheddar cheese


1. Place chicken broth, potatoes, salt and pepper in the slow cooker
2. Cover and cook on High 4 hours or until potatoes are soft
3. Leaving the broth and potatoes in the slow cooker, mash the potatoes lightly, leaving some large chunks
4. Add the milk and cheese.  Blend in thoroughly.
5. Cover and cook on High until cheese melts and soup is hot.

Preschool Corner–Salt Tray

Lately I have been trying to be more present when having preschool time with Sammy.  So instead of taking a ton of pictures while he is trying to do activities I am just going to start taking pictures of the before or after activity.  The only exception might be an activity that Sammy doesn’t need help with and I can easily take pictures.

This week we worked with a salt tray for the first time!  Sammy loved it:

Baby Shower Craftime

This past weekend I went to a baby shower for a wonderful lady from our church. I decided to make the gift for the shower and I love how it turned out!

I did a little knitting by the firepit:


I even got a little adventuress and knitted corkscrews for the top of the hat:


I LOVE how this hat turned out and I know that mommy to be loved it as well Smile

Fire Pit

For Christmas Tim and I got an amazing fire pit from his parents.  It has been so cold or way to windy for us to use it.  Well up until this past Friday.  We had the opportunity to “fire” it up (sorry.. couldn’t resist).  It was also the day after I got my camera.  So I took a lot of pictures Smile.  A few of them I edited out the nasty red boo boo from between Sammy’s eyes.

-Dinner: Breaded Tilapia and mixed veggies


- Breakfast: Smoothies and biscuits

-Lunch:grilled cheese sandwiches, fruit and baby carrots

-Dinner: Chicken Chili Stew and cornbread (a roll over from two weeks ago)


- Breakfast: English Muffins and fruit

-Lunch: Chicken Nuggets, apple sauce, and left over cornbread

-Dinner: Creamy Spaghetti (roll over from last week) and salad


- Breakfast: English Muffins and juice

-Lunch: peanut butter and Jelly sandwiches, salad and yogurt

-Dinner: Bible Study – We rotate through bringing the main dish


- Breakfast: Cold cereal and fruit

-Lunch: Hot dogs, carrots, and yogurt

-Dinner: Beef Stroganoff and salad


- Breakfast: yogurt with granola

-Lunch: left overs

-Dinner: White Chicken Chili


- Breakfast: English muffins and juice

-Lunch: Macaroni and Cheese and fruit

Some St. Patrick’s Day Pictures

We didn’t do anything special for St. Patrick’s Day this year.. Which is terrible considering we are Irish and all.  We did however go visit Daddy at work:

I broke my camera sometime this week!  I was pretty bummed about it!  Tim surprised me with an early birthday present a Nikon D3100!!  I have been having so much fun taking pictures with my new camera.  I have so much to learn about it but I am super excited!
